Sugar & Dairy-Free ice cream that tastes amazing and it’s actually good for you? Yes, it’s possible! So here’s our take on the popular two-ingredient ice cream! If you are a regular on food blogs, then you are probably already familiar with this simple and delicious recipe. And trust us, it’s totally worth the fuss!
I first discovered this amazing recipe while looking for a healthier alternative to ice cream, which is something I absolutely love and just can’t give up on. Except that ice cream is usually packed with sugar and milk, among other things. These two ingredients are something I usually want to avoid in my diet, as they’re just not doing me any favours.
So how does this work? Basically, you freeze one or more ripe bananas and then give them a spin in a food processor until they become a creamy and soft, amazing tasting ice cream. It’s that easy! And you can add any flavour you like!
This recipe has been a life changer, and today I want to share how I make it using two of my favourite ingredients: mango & peanut butter. The mango ice cream is sweet and refreshing, with a tropical touch and the peanut butter combined with the banana tastes like caramel goodness. (you can add a bit of honey too!).
So here’s what you’ll need:
Easy two-ingredient Ice Cream
With Banana, Mango & Peanut Butter Flavour, serves 2
•2 large ripe bananas (they should be spotty and soft)
• a handful frozen mango
•1 Tbs peanut butter
Cut the two bananas in evenly sized small pieces. Place them in a container or a freezer bag and all to freeze for at least 1,5 hours or more. (it’s best to leave it in the fusser over night)
Next, use a blender or food processor to blend the bananas. Keep on blending and scaring down the food processor. It take a bit of work, but eventually the magic will happen and the bananas will reach the right consistency: smooth and creamy!
Split the resulting amount in three equal parts, for three different flavours: banana, peanut butter & mango.
Take 1/3 of the banana ice cream and put it back back in the freezer to keep if from melting while preparing the rest of the flavours. You will use the remaining amount for the other two flavours: mango & peanut butter. First take another 1/3 of the ice cream and place it separately in another bowl.
Add a tablespoon peanut butter to the amount that was left in the blender and give it a good spin to mix the two. When it’s ready, place this also in the freezer.
Lastly, mix the remaining amount with the frozen mangos and blend. When it’s ready place for a few minutes in the freezer and then serve all three flavours.
