Once you try this, you’ll never go back to simple sandwiches again! This Sunny Side up Egg Sandwich is a quick and healthy lunch recipe, that you can put together in just a few minutes. Oh, did I mention it tastes divine?

A perfect fried egg with a runny yolk and crispy edges, on top of a slice of fresh brown bread, topped with fresh spinach or rucola, Italian salami, fresh tomatoes and Grana Padano. After trying this, I guarantee you will be hooked!

These are the toppings I usually like to add but any combination that you like should work too! Just try not to skip the greens, they’re good for you and they add a nice crunchy texture to the sandwich.
