What we put on our plate should should look good and taste even better, right? This delicious Roasted Pumpkin & Goat Cheese Salad recipe makes for a healthy and nourishing lunch or dinner that will leave you happy and satisfied!
When creating a salad, you can play with different ingredients, colours and textures. Any why is that a good idea? Well, besides looking pretty. eating a variety of colourful food provides your body with vitamins, minerals, and antioxidants to nourish your body. So today I want to share with you this beautifully coloured and healthy salad I put together using some of my favourite ingredients: roasted pumpkin and this delicious Goat cheese!
Roasted Pumpkin & Goat Cheese Salad
• 1/2 bag salad mix
• 1 slice roasted pumpkin
• 80-100 gr. goat cheese
• a handful pumpkin seeds
For the dressing:
• 2-3 tablespoons extra virgin coconut oil
• 1/2 tablespoon of raw honey
• 1 tablespoon of apple cider vinegar
• salt and fresh ground pepper
Place the salad mix in the bowl. Cut the roasted pumpkin in bite sized cubes and add to the salad. Cut goat cheese salad slices and add them to the salad. Spread the pumpkin seeds on top.
For the topping, mix 2-3 tablespoons extra virgin coconut oil, 1/2 tablespoons of raw honey
and 1 tablespoon of apple cider vinegar. Blend well and spread it on top of the salad. Add some salt and fresh ground pepper. Enjoy!
